NICE CREAM SMOOTHIE BOWL RECIPE (VEGAN, GLUTEN FREE)

I make “nice cream” smoothie bowls for breakfast or a snack every so often. It’s great because I generally have all of the essential ingredients on hand, it’s vegan and gluten free, and easy to whip up. Not to mention they are food for the eyes as well as the stomach.

Just put the following ingredients into a blender / food processor, and add in a few tablespoons of your liquid of choice in at a time until combined. This will give you the thick and creamy smoothie texture that I personally love.

These to me are the four essential ingredients:

  • One frozen banana

  • A handful of frozen mixed berries

  • A small spoonful of almond butter (this cuts the sweetness of the berries and banana, and gives a more balanced taste)

  • Almond or soy milk as needed

The rest of the recipe is really up to your imagination and what is currently in your fridge.

Other items I like to add in:

  • A handful of fresh spinach or kale (yum!)

  • A tablespoon of coconut milk, cream, or water for flavor

  • Half an avocado

  • Chia seeds

  • Unsweetened cocoa powder

Topping ideas:

  • Gluten free or regular granola (see the picture for the gluten free brand I use)

  • Fresh fruit, get creative with it!

  • Chopped nuts

  • Cocoa nibs

Tip: When all of my bananas ripen at the same time, and I know I can’t finish them all, I prep and store them for this recipe. Simply peel the bananas, individually wrap them in plastic wrap, and stick them in the freezer for whenever you need!
